Cup Cake Meatloaf

A day off today to get something in the smoke.....time for something a little different this time........ :D

50/50 mix of ground pork and ground beef
1/2 cup of minced, smoked poblano peppers
A healthy shot of Heinz 57 sauce
2 packs of taco seasoning
2 beaten eggs and a cup of bread crumbs for binder
Dusted with SuckleBusters SPG
Sauced with Heinz Texas Bold and Spicy the last 15 minutes of the cook.

My cook's sample tasted great........waiting for the wife to get home to serve. I'm happy! :D

It does taste really good. This was an improv and freezer / pantry dive to use what I had on hand.

I take it that it can be thrown in the freezer? I’d be the only ones eating this and it might be easier to make that way rather than eating the entire thing over a few days.

Those look really good, I love me some meatloaf, I like it just as much cold as I do when it is freshly cooked. When I was up at the races this last weekend, I ran over to Justin TX. to get a hair cut. I had lunch at the Lonesome Spur Restaurant. They had a meatloaf plate lunch special, it was really good, and it was 8.89 with the drink. Good stuff.

The next time I cook these, I'll pull them from the mold once they're firm enough to hold shape to let them get more smoke. The conundrum is they cook fast, even at 250.

This was a wing it, freezer dive, gonna smoke something if it kills me, last minute call..............but it was a fun cook and tasted really good. :D

These look good. Gives me an idea if I want to make a spicy meatloaf. I can make separate non spicy ones for the kid. We smoke meatloafs regularly. They make killer leftover meatloaf sammiches!

I like this idea and the pictures are great, When I freeze, I make up vac bags the put each serving in a bag then sit in the freezer for an hour of three to firm the meat and juice then do the vac and seal (this prevents extraction of juices during the vac stage) before its final destination in the deep freezer.

I never thought about pre-freezing before sealing. I'm going to do this from now on.
