The wife says my beef roast have gotten much better

Well, started this morning and kept the temp around 200. At 165 I wrapped in parchment paper and left her go for about another 45mins. Took it out and left her set a few. Image

Nice. Thin slice roast beef and Swiss sandwich wish au jus for dipping sounds good.

There was plenty of juice for au jus. The sandwiches we're pretty tasty. Next time I want to throw a few whole potatoes I the smoker for something different to us.
