OK, so the New Youk Steak dinner I had planned for tonight got flushed. My "better" half went out for lunch with friends (supposedly), and came back home after 6pm, too full for steaks I had prepped. Never mind it was already starting to get dark too. Needless to say, I am NOT amused. SO now I have to figure out what to do with the steaks I'd already Food Saver bagged to fake vacuum infuser them with SPG.
I can't freeze them. I already froze them for about a week after we bought them. If I stick to my schedule with trying to get the Rambler put back together and out of that overpriced DIY garage, grilling time for the rest of the week is pretty well shot too.

Cook em up medium rare, then cube them up. Put em in a zip lock bag with fajita seasoning and make steak fajitas :)

They'll keep for a couple days in the fridge as is. If no time to grill, there's always good ol' cast iron and the oven broiler!

That works within reason. I never try to tell her she can't go out, etc... Do NOT want to be THAT kinda guy. When we've planned a holiday dinner for weeks that she insisted on, showing up AT dinner time too full to eat... NOT cool.
NOW, as far as the steaks... Cooked them tonight before they went bad. Just a hair overdone but still very tasty. The usual technique: 180 on the Rec-Tec till 100 degrees IT, then reverse seared on the Weber kettle.
Towards the center looked a bit better in terms of pink and juicy.
