Chicken Practice

Well, we are a bit less than two months out from the Fort Bend County Fair cook off. Last year i was fortunate enough to grab a 4th in chicken out of 65 teams. In an effort to improve that result, I've been messing around with different brines, seasonings and glazes. Todays another experiment. I think I found the right brine, so this one is a flavor test.

Grabbed 2 HEB natural chickens. Weight was 3.70 and 3.75 lbs. Brined over night in a secret mixture and hit with SB Clucker Dust.

Its about to srart pouring, so they're on the Camp Chef pellet pooper at 200 to get some smoke. I'll bump it after about an hour. More to come!

What is a " Natural" chicken?

That's how they label it. From their website:

H‑E‑B Natural Whole Chicken
- Hatched, Raised and Harvested in USA
- Never, Ever Treated with Antibiotics
- Never Fed Animal By-Products
- No Added Hormones, Ever
- No Artificial Ingredients
- No Preservatives

Actually, last summer, I bought all sorts of chicken and did a side by side. HEB organic and Natural. Costco Chickens, and some from Kroger. I think I ended up smoking 7 whole chickens, each a different brand or type.

Hands down the HEB natural had the best flavor and texture.

Like the ones Grandmama used to cook. Little lady weighed no more than 100 Lbs but come Sunday morning, something was gonna die. it didn't matter to her whether it was a chicken or a guinea; the first thing she caught and she could pop their heads off like a whip.

Color is a bit darker than i like. One of my 2 legged helpers tutned the temp to 300. They'll eat though! Glazed with SB original sauce.

Flavor was on point for me. The wife said it had a bit too mich heat, but she doesn't count. Shes nursing the baby so she avoids all spice.

Incredibly moist and tender. I brined it overnight so that helped a lot.

you brined overnight? I had read stuff from folks I thought knew what they were talking about, that never Brine bird over 3-4 hours? :dont:

I let whole birds go overnight. Hasn't been an issue at all.
