Beat The Heat Cook / Porknography

With forecast temps nearing 107* and a hankering for smoking some meat a plan came together this week. Two pork butts, two pork tenderloins, one rack of SL ribs and a nekkid fatty for good measure. Obligatory pic.... Note the L/R temp difference - gotta love LSG pits.

Time line as follows...

Light pit at 5:15am
Butts and Fatty on at 5:45am (ahead of schedule :thap: )
Tenderloins with nubbins (aka: cooks treat) on at 7am
Ribs on at 8am
Biscuits in the oven at 8:15am
Fatty pulled and rested at 8:15am - served shortly after the biscuits were done :mrgreen:
Tenderloins pulled at 8:30am - resting
Ribs will be done at noon - feasting about 12:30pm
Butts will be wrapped at noon and placed in oven until done.
Out of the heat by NOON!!!! Let the record temps be set

Things still on schedule... Ribs done served with tater salad. Turned out really good and warranted a little nap. Butts still chuckling away in the oven. Got everything cleaned up outside by 12:30 pm just as the thermometer hit 100*

Thanks for the kind words. Everything turned out perfect. I didn't get a picture of the tenderloins - wishing I did. Butts finished off at 6pm and rested for two hours. Pulled and packed by 9pm - ended up with 6.75 pounds after starting with 14.5 pounds. I'm pretty picky about what ends up in pulled pork.

Sooo.... Does this foil make my butts look big??? :laughing7:
