Smoked Beef Roast & London Broil

It's pouring out with a nice chill in the air, so it's perfect timing for a lawn chair, a few beers, a 10×10 pop up, a London Broil and a Beef Roast injected with some Beef Base, some Pecan Chunks, some Lump and a well guarded Prime Rib Rub from my bro.
Hopefully they will be done before the clock strikes midnight because I need my beauty sleep :):)ImageImageImage

60 right now, slight wind after a hard rain. I was in Northeast Jersey today at 3 pm and rain into some hail, looked like it was about 8 pm too !!

London Broil done after 2 hr's, rested 25 minutes and tore up :):)
Gonna slice the rest tomorrow about 1/16" thin and throw em on some toasted Ciabatta with some good Mr Ed Raddish :)
Pulled and wrapped at 125, was about 135 when we stuffed our faces. Definitely a big fan of the Beef Base injection, very juicy.
Roast is resting now, gonna slice a peak or two in a bit :)

I'm thinking these will be used as Beef Roast Sliders with Pepper jack, Havarti and Cooper Cheese, Caramelized Onions on fresh Onion and Garlic Rolls on the Black Stone.

We got similar weather yesterday; it was 3 or 4 PM and the sky got dark and opened up. Gotta love those pop-up tents.
