I figured since I was firing up the smoker that I would fix a couple things while I was at it. :D

A 5 pound chuck roast for dinner

Seasoned with some sea salt and a pepper spice mix and topped with some fresh minced garlic

Added a layer of sweet onion to the top, now it's ready for the smoke

Made a meatloaf

And last but not least some chicken thighs for the wife

I'll update the pics as the cook goes on. :D :D

Have never tried a chuck roast, but is on my list fer the coming season. Have seen 'em up to 15lbs at the local BJ'S (like a Sam's). I'm assuming ya smoke 'em pretty much like a brisket....

DJ, about the same. If you want it for chopped beef, about 200* internal. For slicing, internal temp depends on how you want it. Rare-Med- or well done. Just like a roast done in the oven except it has a nice smokey flavor. :D 8)

I'm gonna do it chopped and try it out down at the pit this summer. I was going to start a string on this topic, (Chuck Roasts), so if anyone else cares to share an opinion, please do so.
