Smokin' Monday

Had a little bacon to smoke, on Monday, so I decided to make a little room in the freezer while the pit was fired up. Smoked 22 pounds of bacon, smoked a ham for lunch meat, and a grass fed brisket, ribs, pork butt, and chicken, to vacuum seal for rainy day meals when the Boss Lady doesn't feel like cooking. Made for a long productive day.

Dangit! I need to get on that home made bacon parade. Never tried it but it scares me knowing I'd never eat store bought again from what I've been told. :salut: :chef:

You wouldn't eat store bacon again. That is absolutely correct. Looks like a great cook today.

Do you Smoke the bacon separately at a lower temperature?

That's just a BIG ole load of awesomeness. I too need to get on that homemade bacon :pig: wagon. I know you have your process on here somewhere, I will look it up and download it and gt this done very soon. Hopefully it will look as awesome as yours does.

I run the bacon at 200 degrees, separate from the other meats, until it hits an internal temp of 145. It usually averages around a 3 hour smoke.
