First Offset Smoker (woohoo)!

Until this 4th-of-July week, I have used a 22” WSM for all of my backyard meat smokin’ and it works great. I have done enough with it over the years that I was ready for a new challenge. So I bought my first offset smoker...

I did not want to spend $1,500+ for a smoker so I chose the Old Country Bravos smoker (purchased at Academy) for eight at $1,000. Man I love this thing! Cooking with flaming wood is a wholly different thing compared to the minion method WSM that I have been accustomed to. It takes a close watch, not a set-it-and-forget-it like my WSM.

I cooked 2 briskets for my first attempt with the new pit and they turned out great. I have them wrapped in a cooler but thought I would post a pic of the first few slices off the flat. Mmmm yummy. It’s nice getting a smoke ring from smoke instead of TQ, celery seed or whathaveyou.

Can’t wait to fire this thing up for a second time maybe next weekend. I’m thinking pork shoulders and beef ribs. Did I mention I really like this new pit (very good value in my opinion).

That brisket looks perfect. I am interested in knowing more details; wood type, seasoning, temperatures and times.

Very nicely done! The move to an offset is not an incredibly easy transition and you made it look seamless. Not to mention, your first cook on a new rig turned out pure money! Welcome to the forum, we look forward to seeing more from ya!

I'm jealous. The options for offset pits up here in Michigan sucks. It's nowhere like it is back home down there. I'd have to drive to Ohio or PA for a decent offset. Looks like you've got yourself a nice pit. Good job. I'm still learning the ins and outs of my WSM. All I've ever used in the past are my dad's two big custom built offset smokers and a little Old Smokey.
