First time to try Hot & Fast

Trying to not be a lurker...

I'm trying the fast and hot method on a brisket for the first time

Any tips?

I'm using my uncles big Klose pit for cooking 25 briskets at a family reunion next weekend, so this weekend is practice time on a pit I am not used to using

Lets see if I can figure out the picture thing


Yesterday I cooked some bacon wrapped shrimp and lobster tails on it


Burned wood in it for about 10 hours yesterday just playing around with temps with the Maverick figuring the pit out

Today is brisket


Fought one grease fire already, figured out I had the trailer tilted back and the drain is in the front
:lol:

Holding temp at 350 pretty well
Need to move my meat probe, will get a mid cook pic when I do

We host pics elsewhere, then size them for forums, and use the image button on top of the Reply box. I think the key is correct sizing.

Imgur is what I use now, after Photobucket tried to charge for hosting. I've done hot and fast a few times when pressed for time. They come out okay, but not like a low and slow IMHO. Most non-BBQ folks lap it up, thinking it's the best they have ever had. I can't keep my offset at 350F, so I use my pellet pooper.

Any tips?

Go to Imgur. Your name will be in the upper right if signed in. Click on your name. Click images. Go to the picture you want and click on it. There will be a blue bar that says View and Edit Post. Click on that. Put your cursor over the picture and a drop down menu appears. Click on edit image. In the upper right of the picture will be your picture dimensions. You want to change that to 640 x 480, or close. Click apply and you're done.

Cell phone pics seem to work out fine size wise, but if I try to use my Nikon for really top notch pics, then the size is too big. When I have to use 3rd party photo hosting, I used to use Picturetrail.com. They've gotten cheap and want you to pay if you host more than a handful of pics though. Looks like I'll be looking at Imgur also.


Let us know how the brisket turns out. I've only done low and slow myself, so not much I can add for advice.

When you post photos resize them to where the long edge is 1200px or less before trying to upload. That will be plenty of detail for most subjects and shouldn't be overly large/less than 200kb per image.
