Here's some cheese I cold smoked earlier this year while it was still cool.

I used my Amaze-N pellet maze with pecan pellets and cold smoked for 3 hours. I vac sealed the cheese (need to do that even if you want to eat it right away. It tastes like a nasty ashtray right off the smoker and needs to mellow about 3 weeks before you eat it) and it keeps for months in the fridge without freezing. This last batch should keep my wife and I through summer.

This was the last run before it cools down again this fall.

My wife and I are cheese lovers and smoked cheese is a real treat. :D

Nice! I've not yet attempted to smoke any cheese. My luck, I'd end up with a puddle of it in the cook chamber. Lol!

I hear you all. Smoking cheese is one of my best reasons for wishing on the cooler weather when it turns fall. I try to smoke at least 3 batches when its cold to keep us through summer.....and we always give away a lot cheese to friends.
