Just received my butcher paper order and I dont have a brisket or beef ribs scheduled any time soon.
What other cooks does everyone use their paper on?
Pork ribs I have always used foil or not wrapping at all.

A lot of people wrap pork ribs in paper.

I do for about 2 hours after first 2 or 3 hours smoking,then unwrap, glaze for last hour or so or so on low temp

How does it compare to foil when wrapping them? Texture difference or something else?
