New place, new trailer smoker, same ol bbq
What’s up guys?
It’s been a while since I’ve posted and a lot has changed. But the one thing that hasn’t changed is the bbq about a year ago I moved to a new house with a bigger yard and driveway. Then about 2 months ago I got an opportunity to acquire a pretty big trailer smoker. There was no way I could pass on it, so I got this bad boy.
Since I got it I’ve already smoked about 15 briskets and maybe 20 slabs of ribs.
I’ve had neighbors stop by and talk to me about the smoker. I always give them some to try if I have some ready. I feel like that’s what bbq is all about, sharing with friends, family, and even strangers.
The smoker was built by my buddy’s grandpa so it’s not perfect. But it’s got it where it counts. He’s old school so he didn’t know anything about a heat deflector or tuning plates. Which makes the horizontal part of the smoker very hot(450-500 degrees) but even at that, the vertical part will be at a smooth 225 degrees. So I smoke on the vertical side and grill on the horizontal side. So far that seems to work out perfectly.
Eventually I might add a heat deflector and tuning plates, but for now I’m making it work. Anyways, sorry for rambling. Let me know what you guys think and I hope all of y’all have been smoking or grilling it up like the pit master y’all are.

Thanks man, I really appreciate it.
I can’t wait to start modding it. I want to add more racks to the vertical side. And reinforce them with angle iron. Right now they slide out but they’re just expanded metal with no frame so they feel flimsy. Lastly, I want to weld on a small piece of metal as a stop for the racks. So when you slide them out they won’t tilt forward.

Thanks bro. My first offset was one of those cheap ones from Walmart. It was like $120 or something like that. Thin metal and smoke leaks all over the place. But I gotta give it credit, it is what turned my onto smoking bbq. I also had an ecb and I must admit, it was fun times as well.
Btw, I love your avatar! I’m a huge Cowboys fan. I bleed silver and blue.
Hopefully we will have a good season this year. We could use it.

Yeah I’ve got her down. I’m not knocking it, but there are things that I’d like different. As time goes by I’ll start making the mods that I want. Until then, I’m going to keep on making due.

Thanks again guys! I’ve been bbq’ing for almost 20 years. And I’ve messed up my fair share of briskets. But hey, you gotta crack a few eggs, right?
These days I don’t worry about it. As we all know, it’s really all about how you maintain the fire. Once I got that down things really turned around for me. heck, I’ll fire the smoker up an hour or even 2 hours before I put meat on.

I've got an Old large stick burner and I do the same thing you do starting the Pit early. I also have a small fire pit that I keep going once I've hit it with smoke a few hours. I shovel red hot coals out of the fire pit over into my fire box of my Pit. It might not make a hill of beans, but I think it reduces the amount of smoke I put on the meat.
