1Lb Rib Eye boneless steaks to be precise.
- Seasoned and ready to go
I'm semi predictable I guess... Cooked at 180 degrees on the Rec Tec till they hit a 90 degree internal temperature.
- Smokey goodness
And then onto the charcoal for a nice sear and a 135 IT
- Done!
- Nice pink color inside.
Turned out amazing. I'd give them a 9 out of 10. Great flavor blend of smoke and sear. I'd have preferred just a hair more pink in the middle, but my thermometer was fibbing to me.

They went onto the Weber once they hit an internal temperature of 90 degrees.
It's getting to be my standard MO; 180 degrees on the Rec Tec to give anything I'm cooking some good smoke, and then finish on the Weber for a nice char.

Your killing me!!! Not this weekend but next we are going to have some friends over and in going to splerg and have some thick butt steaks cut. I better not let the wife see the bill. Anyway I can't wait to do it. By the way they are going to be ribeyes.
