(Shhhhhh! I won't tell if you won't.)

My family really likes the ribs like this. To test for doneness, try and pull 2 bones apart in the center section. They should pull apart easy, and the meat should pull away from the bones easy. The texture isn't quite the same as the low-n-slow ones, but it's a good flavor and bite.

Feb 3rd and 4th are when you submit the photos. If it takes a couple days to develop your digital photos nobody will know........

I appreciate the offer - that is nice. But I see this as a challenge as well and I really do want to do it myself. I don't think I have bitten off too much (yet), but I'll know for sure about 1pm on Friday.

Everything went well. Here are some pics. I thought the chicken was the best, but for some reason the brisket was GONE in no time.
