with real wood that is.
My pellet spitter does good smoke at low and slow but not soo good at hot and fast. Plus it is limited on how many I can squeeze in it.
I had a 10 lb. brisket in the fridge I needed to either cook it or throw it in the freezer. Decided to do a test run with it in my block smoker. I want to see if I can get one done in say 6-8 hours and still get good results
I got the smoker chugging along between 275 and 300.
Time will tell....we'll see

At 2 1/2 hours in IT was at 145
Dropped temp to 250. That was bout a hour ago. Thinking its hit the stall
Been holding at 156 for a while now
I'm shooting to have it done by 4 this aft. That will be 8 hours. At the rate it was cooking I think I could of had it done in 5 or 6.
This old smoker can smoke stuff in a hurry. Like I said I'd never done a brisket in it before so I really didn't know what to expect.

I built this contraption from scratch maybe 25 years ago. No web back then so I was on my own. Took me probably 5 years to get to know it.
One of these days...or years...I want to change out all the metal to stainless. Like me she's starting to show her age.

Sorry no money shot of the sliced up product. . We ended up bringing it to a party my daughter was having. The brisket wasn't big enough to serve everybody so I just sliced it up on the appetizers table. I couldn't slice it up fast enough for the vultures.
Just about ready to tin, IT was around 165.
I'm going have to try my local Cash and Carry outlet for my next brisket. By the time I cut all the fat off the top of the point of the Costco prime there wasn't any point left hardly.
My local Cash and Carry has Briskets in select and Black Angus grade. What the heck is Black Angus grade.

Looks like it turned out well! I've been wanting to build a cinder block smoker like that for some time now. You've rekindled that flame now.. The wife may or may not share my enthusiasm there. lol!
