Keep it simple. It’s been a while but I used the Franklin method with good results.

I use Franklins method and it works great!
I agree they cost too much, BUT when cooked right they are some of the best tasting beefcritter ever and BTW, Costco has them at a better price point.

True. I went looking for them again last week and asked with the usual response...nope we don't carry them. I wish they did.

What's the majority on wrapping these?
I seen Franklin's video and he doesn't wrap, while other do.

I don't wrap them but as long as you waited until they develop the bark I don't see why not.
They get super tender without wrapping FWIW.

I agree with this. The only thing I’d add is if you do wrap, open it up at the end and let the bark set back up.
