Hi Russ,
I did leave quite a bit of fat on but it was just too much. Some pieces had a good 1/2" of lard you had to bite thru.
I like fat and gristle, but that was like biting into a ballistic dummy that NCIS uses to recreate bullet trajectory, lololol !!

It was almost like the grey Antisieze we use on the cars !!
ONE little dab from the tube or brush seems to end up all over creation in the matter of minutes, lol !!
