A little practice and experimenting.
Debbie and I are going to run through a few recipes on ribs and chicken today for an upcoming competition. I have been wanting to try the paper wrap brisket but I am gonna add a twist to it stay tuned.

I wrapped the brisket once my color was where I wanted which was about 160° internal then placed in a pan to finish.
By doing this it added two hours to my usual cook time and while the brisket was very good I saw no real difference in this brisket or my panned and foil cover as far as taste or tenderness.
The ribs turned out very good we cooked them open on the rack for 3 hours then wrapped for one hour.

We have been playing with the racks for a while Justin. It allows us to keep the ribs open longer while cooking at 300°+ as they do not get the brunt of the heat from underneath resting on the rack and pan.

I use pink Butcher Paper; I have no idea, since I'm a backyard smoker, whether or not it is better than foil. You could think 2 ways; supposedly, the paper protects and allows smoke in; the foil braises better; Potato/Potatoe; each to his own
