Anyone ever heard of it? What is it? My brother called to ask me about it which I had never heard of such a thing.

Rib cap?

Postby motabbq » Sat Feb 17, 2018 3:23 pm

I think what you are talking about is a ribeye cap. That is the fatty part of the ribeye. Usually it’s the half moon shape on a ribeye steak. Costco actually sells these by themselves but can be pricey as they are prime so about $20 a lb.

Since its fatty it cooks fast and can flare up. Watch like a hawk or you’ll burn off your armchair.

I always look for ribeye’s with the biggest caps...

If I had to narrow my choice for best protein down to one prime cap would be it. There is the perfect marbleing, always the absolute best bite on a steak. If I could afford it that would be the only cut I would ever eat.

Costco sells like this... was there this afternoon. Image

Delicious stuff, but I like the whole ribeye... medium prime... it’s all good...

Yeah. I bought it once then I had to get another job to pay it off... its a treat if you can get a butcher to cut you some nice thick ribeyes they can have plenty of cap to enjoy..

+1 I’d offer to split with you but we’ve agreed to disagree on the proper doneness of steaks :)

Not a problem, you could just get your part off the grill while it's heating up to proper cooking temp. :deadhorse: :deadhorse: :deadhorse:
