Good looking brisket. :D I would've cut more against the grain but it wouldn't have slowed me down having those slices on a flour tort and some fresh pico. :D

Yea I like it up here. Been here since 1954. Great area to raise a family.
Still for the most part a conservative farming community, but like everywhere West of the cascades ...getting a little too busy for me.

Are you talking about more of a bias cut? I thought I did go against the grain on it.

I totally get it. I’d rather have a 10 acre spot but the wife wanted neighbors so she won out. When she’s happy then life is good right.

This piece caught my eye there were others in the pic.
I used to slice my brisket all the way to the top leaving the point area with long strands like roast. I now separate the two and rotate the point to cut against the grain. Still a good looking piece of meat just something that caught my eye. :D

Thanks for the heads up and compliments. The chili I made which I used this brisket was excellent. It said mild but my kids were it was spicy. Kids!!???
