Baking powder creates very tiny air bubbles on the surface of the battered chicken when it is placed in hot oil. The bubbles expand the surface area of the batter, breaking up its thickness, which results in a lighter, crispier fried chicken.

10-4 on the Fried Chicken BUT ol Capt'n did those cwispie wangs on his 22" Old Smokey over coals  I do know that I'm gonna try my hand over some Kingsford at Lunch with some ABTs so I should end up with one or the other in the wang dept - - had them sitting in Hootchie Mama all morning so my plan is to spray with Canola, Dust with Baking Powder, put them on the ECB and PRAY with fingers crossed - - - more later if there's anything to take a pic of :laughing7: :D

Cool to see how it turns out. I honestly don't think the source of heat matters. There will be enough oil to allow the chemical reaction that is releasing CO2. Baking power gives off CO2 bubbles when combined with liquid, or heat during cooking. The moisture on the chicken itself, plus the spray of oil "should" be enough to trigger the reaction.

It's baking POWDER and not SODA. :salut:

I'm fixing to soon find out when I do some at lunch today.
I'm just assuming that you grill them dry with no sauce basting during the cook ??? RIght, Capt'n :dont: :?:

yes, although i did spritz them once, the first time i spritzed at 90'mins
but when i took them off at 2hrs they were already dry again
it gave the skin a nice texture, with the seasoning as part of the flavor
and the meat was still juicy, sorta of like fried chicken

thanks, Capt'n and Outlaw, I got the Kingsford lit so we'll see what happens directly - - don't know if I'll spritz during the cook or not - - - maybe let the wings tell me what to do :dont: gonna be fun for this ol Dawg no matter what :salut:

the only reason they got spritzed was it was the first spritzing for the ribs
they were sitting there and i thought i'd see what happened
it didn't make any difference
but i wouldn't spritz them again

See my thread when you have time. I spritzed about 20 min before done, flipping 10 min later. :dont:
