Smoker size
trying to figure out if my store bought oklahoma joe smoker is made to the correct proportions. i did use feldons calculator and the firebox to chamber seems ok. just trying to figure out if the chimney is too small a diameter. it is only 3 inches. wondering if it should be 4. reason is that i feel my meats sometimes have too much smoke flavor and was wondering if the smoke is not exiting quick enough. thanks in advance.

Re: Smoker size
The opening into the cooking chamber is too large and the 3' exhaust is too small. I rebuilt my son-in-laws years ago and put tuning plates when I decreased the opening and put a 4" x 24" tall exhaust on it.

I've smoked on a Highland for a long time and have drawn the conclusion that the exhaust is a tad small; for other reasons. I have strategies to mitigate this issue but, I'd not see any wrongdoing in fabbing a larger exhaust.

Re: Smoker size
Keep in mind that fire management plays a larger role than exhaust, in regards to overly smokey.

Fire management also relies heavily upon intake and exhaust flow. If your cooker ain't breathing right, your fire is gonna suffer

Could extending the smoke stack help out with drafting?

To a certain point. It's MUCH easier going to a larger diameter, shorter stack to fulfill the required output need. You may be able to add another 3" exhaust port, but labor requirements are something to consider.

Re: Smoker size
It has been a while since I cooked on one, so they could have changed.... turn the fire grate sideways so it is higher in the box, bent metal charcoal basket. I don't use charcoal but put chunked oak in it. It doesn't take a lot and you want fire not smoldering. It is easy to overfill and get a messy fire. A basket keeps it contained. Drop a chunk of oak in every 30-45 minutes
