Khaos In The Keister !!

Postby woodenvisions » Sat Jan 13, 2018 12:28 am

Ok, so it's been a while since we did a whole bird over Apple, so here we go..

I like to change things up sometimes, so instead of beer, I used Monster Energy Khaos ! It's a fruity, carbonated energy drink. I'm not much on these, but every now and again I grab one in the morning at work before I load my run for the day.
So tonight, we injected the bird, then a mustard slather before 3 different seasonings went on. Lit the lump, then added the pizza stone/smoking stone/defletor with Apple Chunks and set the bird over the Khaos..

250 for 2 hrs, then 450 for 15 minutes and here we are.

Not only tasty, but juicy juicy juicy....

I think I have found the perfect container to brine 1 chicken at a time. I use an old tea pitcher. The plastic kind. It will also hold about 3 to 4 cornish hens. What do all use?

I agree buddy, I've never been let down using the beer can, regardless of the ( fuel ) in the can.

Appreciate it Emm.

Haha, that's what I said when I had to figure out how to get it off of the can by myself...
Deb was sleeping with the little monster, it was POURING outside and I was more concerned with getting it in the house without ruining the skin with the rain hitting it.

I eventually grabbed tongs with one hand, slid them between the base of the can holder and the bottom of the bird and carefully pryed the bird up till I could ( slightly ) tilt it enough to get the can out WITHOUT frying my hand with the Hot contents in the can, all while holding the pizza stone in the left hand..

I'm sure I looked pretty funny to the neighbors ( if anybody was still up ) !?

I usually hardly ever brine anything.
I know there are perks to it, but most times I cook birds, weather they are chickens or turkeys, they are done in my Oil less fryer.
Til this day, I've never cooked or had a juicier bird than cooked that way.

This bird was done in the Akorn with a beer can as my Big Easy is on loan to a good friend. As good as this was, the Big Easy Still makes a juicier bird even without a can used in it.

There are a lot of members here that brine with great success but since I found the beer can method, that's all I do with chickens. However, I do inject my Gobblers before sitting them on the can. My guess is that they're all good ways and it's up to the Cook as to which way is chosen. :salut:
