Cold and rainy, little bit windy, perfect day for a brisket... and a few Shiners.

Rubbed down last night, put it on about 0630.

I’ll admit I’m a little slow. Was thinking “what the H is a Washington brisket” then I read OUP’s reply :) it’s been a long week.

Nice bark on that brisket. Looks great.

Reason I ask is Costco seems to be the only one that carries packers up here at a decent price.
Found a choice grade packer up here a couple weeks ago from my local grocer. $7.99 a lb :roll: won't do that again.

That looks great. Btw where are you? Have you tried blue meats? Olson’s? Green valley? Those are very good butchers in south King and pierce county.

i'm over in Tacoma (Parkland - Fredrickson area). I've been to Blue Max Meats off of 512, they don't keep briskets in stock.

There's another one by Eatonville but I wouldn't trust them. I take it that you could order it from Blue Meats just not have the brisket as an every day item.
