found this cool video with Walter Jetton, LBJ's favorite bbq pit master and the king of texas bbq showing us how to do it.

IMHO the Pioneer Pit Masters that brought "Q" to where it is today really improved the overall taste, tenderness and moisture of the final product BUT it sure takes longer to burn a chicken these days than it did back when :laughing7: :banghead: :D

The barbecue and Jetton were cool. But as my dear old dad said about LBJ:

“Give that guy a free hand, and he’ll stick it in yer pocket.”
BE WELL, BUT NOT DONE
Hank: "Do you know how to start a man's heart with a downed power line?"
Bobby: "No."
Hank: "Well, there's really no wrong way to do it."
