Franklin brisket in my stocking

I got an early present today, my family got me a brisket from the man himself!
He was on duty a few hours ago and served her himself.
She reports that he was friendly and they chatted about my reading his book and trying to copy him to which he replied "ain't it fun"?
We're going to attack it this evening, I can't wait.

I don't want to be over critical or harsh on Franklin but it was not as good as I expected.
It has great bark but little smoke ring and almost no smoke flavor.
I was expecting some serious post oak smell and flavor..
On the plus side, the flat was the most tender and flexible I've ever eaten.
The wife says the ones I smoke have better flavor.

This is the exact reason I avoid Franklin's like the plague. His celebrity has taken control and that's what sells now. I stood in line my first time there for near 3 hours to end up with something that just didn't seem worth that kind of wait. Good? Yes. Waiting hours on end to MAYBE get some food or leave hungry good? No..
It is nothing like when he first started. THAT'S when it was worth waiting for.

I can't figure why there was no post oak flavor..they must have the same problems I had when sourcing properly aged post oak around Austin...nobody has any or at least none for sale.
With the massive drought we had a few years ago that lasted year after year after year, there were many thousands of oak trees that died from lack of water, my thinking was that there would be plenty to go around, even if it was pricey..or maybe those dead trees are still waiting to be cut.

Could've just been burning hot and fast that day and the briskets cooked quick. It could be one of those things that equate to having to cook a lot of briskets to pack and not showing the time and care on them. I doubt it was his choice of wood selection.

Could be but I've cooked them fast and slow with seasoned post oak and the flavor is unique.

I agree with T-Dragon - - - my $0.02 would be, it seems that "Fame and Fortune" has inevitable demons that destroy what the early success created to begin with. Most of the time, because of increased demand, this comes from having to expand and bring people into the operation that "don't have a clue" and it's just a pay check for them. There is a huge difference between Passion and Paycheck when it comes to Product. :dont: :roll:

So it turns out that the best briskets are cooked one (or a few) at a time with the fire hand fed by a hungry pitboss...you and me!
