Inside skirt steak

I bought some inside skirt steaks 4.5 pounds to be exact. Anybody ever cooked these. I will post a picture in a min. Right now I'm cooking chili foe my wife's office chili cook off.

Hey JC,
I've used Inside and Outside, I didn't notice much of a difference besides one is usually thinner, can't remember which was what?
Imho, I would cook them hot and fast, that always seemed to be the trick when I've used that cut. I've only made Fajitas with them, but I'm sure there are lots of good recipes with that cut as well.

grill them hot and fast to medium rare
no more than medium at the most
carve them across the grain

I think I'd look into some Fajitas from some of that :tup: :chef: :salut:

That cut of meat has the perfect fat content to me, it is what we also use for fajitas. Hot and fast, and it is ok to cook to a perfect medium. They take a marinate real well over night as well. Wish I had some right now. :chef: :chef: :chef:

let 'em sit in lime juice for a bit. then throw on some spices, grill high & fast.

Don't shoot me but I tried a new to me recipe. Threw them in the crock pot with peppers and onion and lime juice. Added salt pepper and garlic. Cooked slow all day. Shredded them and served on Soft fried corn tortillas with fresh Pico and sour cream. Yum!

Nothing wrong with a slow cooker buddy...
I've had some lip smakkin meals from them many of times.
