Have a bunch of family that came in yesterday so I decided to cook the Texas BBQ Trinity for the pre Thanksgiving Festivties.
Brisket went on at 1am Wednesday and came off at 6pm for a 17hr cook of a 13.5 lb Costco prime. Cooked at 250-275. Naked for 12 hours and wrapped in butcher paper for 5 hrs.
Brisket was bomb.com, ribs were a little over done as many fell off the bone, and the sausage was pepper garlic venison and cheese jalapeño venison.
