Sunday Smoke, Beer & BBQ
While perusing the isles on Friday evening, I noticed that HEB made the mistake of pricing a 10lb Prime Brisket as a
$20.06 cent Choice. Had a look at the Prime sticker, inspected the meat and came to the conclusion that they did indeed make a mistake! Cooked last night through the morning, the results where pretty darned good if I may say so. From the cook, to the color, to the bark, etc. this brisket ended up phenomenally. I hope you all enjoy the photos, below is the process if anyone has any questions, be glad to help out.
10.5lb Prime Brisket, slightly trimmed to square and cut away loose fat, etc.
Seasoned 24 Hours, bought to room temp prior to cook.
B&B Post Oak Wood
Water bowl for temp regulation
7 hour unwrapped cook, 2.5 Hour butcher paper wrapped, rested for 3.5 hours in a Yeti 45.
Cook temp as shown below. Held steady with very little heat fluctuation. I hope you all enjoy.

Thank You!! When I opened the pit up for the first time after 5 hours to moisten and refill my water pan, I knew I was in for something special. Real happy with the end result.

Dang it Hwy77, that's a good looking brisket Sir.
That prime looks to have more meat then fat....unlike the primes that Costco sells in my next of the woods.
