Church Picnic Brisket

We had a church picnic today and I found at last minute last night. So, Wally-World had some USDA choice for $1.96/lb, and one of 'em called my name. Put her on around 9 pm, checked here at about 1am, added some probes, then pulled at her 8am this morning. I really need to get a good knife. She was purdy and smokey and quickly gone at the picnic.

Pretty brisket! Looks like anyone to partake in that meal had nothing to complain about. As for new knife, Dexter has a couple good slicer options. Mundial as well. I have a couple mundials, 6" boning knife and 10" steaking knife. Both of them have been through the wringer amd back. Ive used them for everything from game processing to meal prep. They are easy on the wallet too!
