An absolutely BEAUTIFUL day today, so the masterbuilt is rockin' with a pork butt and I'm totally feeling lazy, sitting on the front deck enjoying the smell from the smoker being carried in the light breeze on this 64 degree afternoon.
Sure wish I could attach the smell with this pic..

Thanks for the kind words! The masterbuilt did an amazing job on this butt. I cooked him up at full blast, 275, using cherry chips for smoke and made a mopping sauce to drench it the last half of the cook. Mopped about once an hour for the last 5 hours, then a final drench before getting panned and wrapped to rest.
The mop was... 1.5 cup pineapple juice, 1.5 cup apple cider vinegar, 1 cup white vinegar, 2 tbsp Worcester sauce, approx half cup yellow mustard, 1 tsp minced garlic, 2 tsp dried minced onion, 1 cup packed brown sugar, 1 cup white sugar, half teaspoon red pepper flakes, 1 tsp each salt, pepper; half tsp cumin, half tsp ground sage. The seasonings are exact and listed but approximately measured by best professional guess! Liquids were measured precisely.
I made this same sauce at the restaurant in a trial run, but used honeycrisp apple cider in place of pineapple juice and the flavor profile was a touch different. That being said, you can switch the juice to your liking!
