Well, the California brisket is done. It's rested, and is cooling so I can vacuum seal it. I may have to separate the point and the flat to fit it properly. Might not be a bad idea so they don't have to heat it all at once.

My neighbor's brisket is resting now. He's coming by in about an hour to grab it. I'll grab a picture of it when I unwrap it.

Thanks for hanging out with me all day! (Not pictured, having to clean my throttle body while cooking and working because my check engine light came on :roll: )

Looks really nice. I vac sealed a whole rack one time. Worked out well…just can’t quite remember the exact defrost method.
