Family Reunion Sausage Quanity

Hey Y'all, we're putting together a Family Reunion this month and my B.I.L. is going to do some Zummo Sausage but doesn't know how much to fix. We are expecting 40 to 50 people and maybe a few more and 6 racks of ribs and 2 briskets have been donated. There will be lotz of fixins, sides and desserts also but the question is "HOW MUCH SAUSAGE" do you think he needs to bring :?:

Are you going to slice it, or offer whole links? Anytime I have done Q for larger crowds I planned on the average person to eat 1/3 lb of meat along with all the other trimmings. I tried 1/2 lb the first couple of times and had way too much left over. Then you take and multiply how many people by the 1/3 lb rule ie: 60 x 1/3 lb = 20 lbs meat total. Then divide that 20 lbs by the different types meat. In your case brisket, ribs, and sausage =3 Soooo, I would think 7 lbs of sausage would easily cover what he would need. (even accounting for the cook snitching while cooking and slicing)
All that is predicated on there being a variety of side dishes and they don't swoop down on the meat exclusively. I know there are folks better qualified to answer this than me. Just didn't see anyone else posting so thought I would share my limited experience.

You can easily apply that rule to whatever quantity you feel each person would eat. Big eaters, bump it up. Then there is also this list to consider for left overs. :laughing7: Let me be the first, I'm sure others will feel compelled to add their info as well: :oops: :oops:

:?: Rings or Links :?: - I'm sure he can go either way - - - when I eat sausage at a function I prefer it sliced diagonally about 1" thick ?is this good or just me? I also lean towards the 5" party time links http://zummo.com/food/sausage/ and maybe cut them in halves ??????

I also favor the diagonally sliced, but thinner.

Just a 2¢ thought,
If you add Alfredo Sauce and Rigatoni and mix it well, you can make that 1/8th mile into a mile. Done it plenty of times, works well and tastes great.
Or add potatoes and or peppers with sauce like a good marinara or sketty sauce.

Just a thought from the Italian in the Northeast.

Looking forward to ya pics emm, I know it will be a real good shindig. I love sausages, in fact I've got to go to my fave butcher and get some stocks. I'm sure you'll do them all proud.
