Brisket, trying something different

I put it on at 5:30 pm today and am going to slow cook it all night on the pellet pooper. Early tomorrow morning I'll add 3 racks of ribs, wrap the brisket in paper if needed. Stay tuned. :chef:

Ginning right along up to 144 degrees. I have it set on 200. Let's see how this plays out. Going to bed.

I'm thinking it was 13 lbs or so. Looks like it is almost ready. At 190 degrees and almost passes the probe and touch test. I'll take some pictures before slicing. Ribs are up next. :blues:

This is one hard headed brisket. :banghead: May be a few more hours. Flat is at 174 and point at 187. I put this on at 5pm yesterday. :dont: I wrapped it this morning. I guess I will have to wait for it. :scratch:

Longer it sits at those temps, the better it will get..let it ride.

It finally made it to 203. It broke over and is now resting in the cooler wrapped in a towel. I'll get some pics in a few hours. Ribs get wrapped for 2 hours in 30 minutes. Then one more hour after they are mopped with SuckleBusters Peach Sauce. I used SuckleBusters Pecan rub on them. Still using up my Pit Barrel Cooker Beef and Game rub on the brisket. I bought a lot of it. :coolnana:

Well it came out tasting great, tender, point is perfect but the flat is a little dry for me.
