Day of labor!

Brisket, beans, and mac n cheese! Didn't snap any pics of the mac n cheese, fairly straightforward stuff. Lol! Beans were pintos with some jowl bacon and onion, seasoned with my top secret blend of stuff Brisket was rubbed with salt and pepper and rested overnight. Put on the pit at 7am, 300 for the first 2 hours, then 250 til 1pm. Panned it at 1 then cranked heat to about 325 til 4pm. Pulled and rested til 530.

The magic beans Jack SHOULD have bought!
The sauce for dipping: I call it "Cherry Bomb". Lightly sweet with a little tang, a bit of heat up front and a cherry finish. Turned out perfect! (Can't wait to try this one on chicken).
All in all, not a bad day! The brisket was weird. Moderately dry at the flat, but super juicy at the point. Tender throughout. The sauce was a work in progress for me and I finally dialed it in. It went good with the brisket, but it's not the intended application. That however, is another post!
