This was my best brisket yet except for the smoke ring. My previous ones had beautiful smoke rings, ain't sure why this one didn't :dont:

This one I ran 10 hours at 225. It stalled out at 162. Had a nice bark so I set it in a foil pan covered. I cranked temp up to 250 for maybe a hour then 275 for maybe 45 minutes.
Wasn't paying attention much the last 45 minutes but when I checked it last IT was at 198.
Did the poke test with my scratch awl and she was ready. Now I know the meaning of the phrase "like a hot knife thru butter. :D :P .
Total cook time 12 hours. Air temp here was in the mid 90s that day.
Oh yea...I had a pan with water placed directly below it.

Looks like some fine vittles right there !!
