Whyyyyyy can't we find full-cut spares any more? These were St. Louis trimmed. Anyway, mustarded, rubbed (Sailor's Secret Odds 'n' Ends), Brinkmanned with cherry 'n' apple. Foiled for only an hour. Glazed and 1 & 1/2 hours to done.

We decided on this variant of 3-2-1 so the ribs wouldn't get way too soft in the foil & there would be enough time to reharden the bark. I just used a little bit of apple juice and some butter for the foil wrap. The ECB was reasonably well behaved (using a Minion approach), with temps ranging between 225 and 275 (mostly staying just a little below 250). We had to freeze most of the rack right away, so we wouldn't eat any more of it (it was supposed to be for our Labor Day BBQ).

SK's sides were great, as usual.

nuttin wrong with tweekin dat 3-2-1 - - - my problem is the Wiffy likes the meat falling off the bonz and I don't, nor do most of the company I cook for on occasions - - - - - however,, I would have held out at least two "Breakfast Bonz" from the Freezing - - I really like the looks of that rack, PB :salut:
