In respect to the seasoned beef....i will use spicy Italian sausage...or even goto the butcher and buy their sausages and removing casing. Mix that up with cream cheese or other options.

Good ideas!

I usually hold back and freeze some pulled pork or brisket from previous cooks to throw in either my beans or jalapeños.

I started using 1/3 slice of bacon laid on top instead of wrapping a whole slice around the stuffed pepper..makes a pack of bacon go a lot further and you get more pepper flavor too...

I agree with getting more Pepper Flavor and sometimes I do that with my Texas Pepper Rack. :tup:
