Gotta long day ahead

Smoking up some pork bones and a few chickens for a close friend of ours 60th bday.
Put the ribs on a couple hours ago.

16 of a total of 24 racks waiting for the pit to warm up.

Got 6 cluckers going in the pellet pooper in a couple of hours.

Got my fingers crossed it goes well today. The bday girl is a caterer and owns with her husband a restraurant and a couple of bars. Thank gawd she doesn't do BBQ . :D
Luckily for me most folks around these parts don't know good que from bad. :mrgreen:

5 hours in, ribs are ready for the tins for a hour or so

Man that's one big cook, your friend is very lucky they have you for a friend. I've never done a big cook like that one you are doing. I admire your confidence, please lots of pics please.

Well I quess it all came out ok according to the reviews :D

To be honest I didn't eat any of the ribs or chicken. After smelling it and dealing with it for 8 hours me taste buds where "kaput" :dont:
I did load up on the bday gals Potatoe salad tho..it Twas amazing :D

Fantastic. All those ribs were prepped and trimmed to perfection. Mine never look that uniform.

OUP...after the ribs came out of the tins they went back in the smoker lathered with Gators Honey BBQ sauce until the glaze set.

Outlaw.....The St Louis ribs I get come nicely trimmed. No trimming required . All I do is pull off the skins.

I got 2 more good size cooks coming up in the next week and a half. Next Sunday I'm smoking up seven 16-18 lb prime Ribs for my buddy's son wedding. Doing them in pellet poopers so that's a pretty easy cook. :D
Then on the following Tuesday it another couple of cases of oink bones for my Rotarys club summer social down on the river. After that it looks like I'm done for the remainder of what's left of the summer. :D :D :D

Wow... What an undertaking. Everything looks fantastic. I second the loss of appetite for smoked food after a long cook. A shower before dinner helps me.
