New Years Eve Wings n Ribs

New Years Eve Wings n Ribs
These wings were smoked for about 90 minutes at 275-300. I only used 1 small chunk of hickory but they had a nice smoke flavor.
I also think they lost some smokiness after being fried (1 1/2 to 2 mins).
My wife doesn't think so, but she didn't try em before I fried em and she doesn't like as much smoke flavor as me anyway.
Also had 3 racks on the WSM. The ribs on the bottom rack got a little dark though. First time I had ribs on the bottom rack and may be my last.

No plated pics, hot sauce was on the side as not everyone likes it as hot as I do.

Mike you did good. Got me some ribs on as we speak.
I did some beef ribs yesterday, dog could not even eat them. They was tough.
