Sunday Pulled Pork and Ribs

Postby rickhdz36 » Tue May 30, 2017 10:05 am

So on Sunday I did my 2 pork butts and spare ribs. Started about 3am and pork but wasn't finished till about 4pm. The ribs came out perfect and so did the pork butt. But it didn't seem to have that nice smoke ring on the ribs or on the butt. I think it was more my fault because my wife did work and I had to watch my 2 year old son who did not want to sit with dad and watch the smoker lol So my smoke and temps were not very consistent like they should have been. Temps were running between 220 and 265 and averaging around 240. After 6 hours for the butts I just said enough and tossed them in the oven till they reached temp. The ribs I did 3 hours naked and 2 hours covered. But like I said the smoker was not getting the attention it needed. But this time the ribs cut like butter but held together and pork butt shredded easy with the bone coming out with no effort. All in all it was good weekend and I ate WAAAAAAY to much and we have a lot of pulled pork leftover. Hopefully my next smoke I can focus on the smoker.

"What the heck is a smoke ring?" :laughing7: :D  just pass that plate over to me and I'll close my eyes so I don't notice it's absence. :salut:

Looks good to me...
You might try Sucklebusters Competition rub for better smoke ring, it is a mild tasty rub that can be modified for more heat/sweet etc. BTW I use it straight.
