Double Smoked Christmas Ham

Postby OSD » Mon Dec 24, 2007 6:14 pm

Started with an 11 pound bone-in ham, smoked it Pecan wood, and used a glaze made from brown sugar, honey, & pineapple juice. :D

Wowser! That ham is lookin good!

A feller at my wifes work brought a ham that his feller friend smoked. Man, that was the bestest ham that I have ever had, well, almost.

I told my wife to get the recipe on how his feller friend smoked it.

I love ham, but my wife doesn't like ham because "it's too salty".

Wow, Jim that looks great! That takes me back, my Grandfather cooked a ham like that every Christmas. He would put a cherry in each of the pineapple rings. That is good stuff!

Wow lau-lau,

That is one good looking ham... I had some ham at a friend's the other night. One of them sugar cured sold in markets. I saw how this market does it... They dump their mix of whatever on the ham and hit it with a propane torch! Yikes!!!!! Too much heat cause it looked like asphalt....

Take care,

Excellent! That looks so lean and good! We didn't have any ham to munch on yesterday, so that would have been good!

BW, I brought it up to 160* internal and then covered it loosely and let it rest for about 1 hour before slicing. :D
