Hot Breasts!

Atomic Chicken Delights :)
Chillis de-seeded

Stuffed with blue cheese.

Wrap a chicken fillet and beat it with a rolling pin to flatten it out.
Image
Make a mixture from basil (fresh, finely chopped), olives and left over blue cheese. I chopped up the left over chillies (the tips) and added a bit of lemon zest to the mix.
Image

Lay out the bacon.
Image
Place the chicken fillet on top and paste with the mixture.
Image
Pop the stuffed chilli on.
Image
Image
Roll the whole thing up and tie together.

Ready to go onto the smoker.

The final results were great and enjoyed by the people we had over for dinner.

Thanks guys, it really was tasty... a word of caution though when de-seeding the peppers... DO NOT SCRATCH/ RUB any other part of your body... It HURTS!
All I need now is to progress to a whole suckling pig (arrived yesterday by courier) and a Turducken.

It's nice to see you back Ian!! I know you travel alot.
Those hot breasts look very good! How long did they take to cook? Did you do it indirect? I assume so.

Do what I do and wear gloves! After suffering with burning hands for over 12 hours, I refuse to ever de-seed/membrane peppers again without gloves.

Laura, I did them on the Frontier (water smoker) for 45 mins at 220, then just crisped the outsides directly over the fire.

Thanks for tip on using gloves Allie, but if I get an itchy eye halfway through, I just scratch... then cry!
