Should I buy the ham now?

I'll have next Sun.& Mon.off.Going to smoke up sum hams.Local store having a sale..99per lb.Should I buy them now & frezze them?We have a walk in cooler at work.Temp stays about 30 degrees.Will the hams be ok,if I buy them now,& leave them in cooler for a week?I could wait & buy them later in the week,but they could be sold out.

Think I would buy them now and stick them in the walk in. Check the expiry date and make sure they aint fixing to get outta date by the time it comes to start cooking.

Agree with BW on this. :D What type of hams are they, fresh or smoked ( cured )?? Just be sure of the Exp. date. :D :D

I always think Ham does pretty well even past the first few days of an expiration date, but if they are in date, then buy a bunch and hang on to them until you are ready to smoke them.

Then when they are smoked you can freeze them and send them out to family and friends for Thanksgiving!

I like to smoke them with an Oak, Apple and Maple mix, and I use a honey mustard glaze on them to finish them, I only take them to 155 before removing and resting.

I stopped in the store yesterday,the hams they had out,getting ready to expire.The butcher said to wait a few days.sale is till Fri.I'll stop in either Wed.or Thurs.,& pick me up sum.
