My Itty Bitty Brisky

Postby David S » Mon Dec 10, 2012 8:19 pm

I threw a three pound flat onto my 22 inch kettle over the weekend. Went with a little yellow mustard, salt and pepper. Kept things simple.

Four hours in hickory, two hours in the foil with a little Dr Pepper.

A little over cooked but me and the boy tore it up. One of the nice things about cooking a small flat is that you can't hurt yourself too bad when you eat the whole thing!!

Nice looking flat... How did you like the DP in the foil? Add a touch of sweetness?

jtilk, DP was no big deal. I was just goofing..I wanted a little liquid in the foil and it is what I had on hand. I couldn't really pick up any special flavor from it.

I've heard of people using it in their injections and what not ... never tried it as I'm not one for sweet brisket really. Just curious if you could tell a difference.
