I have always been a fan of IBP pork ribs ! Nice fat content, good amount of meat between the bones. I have used other brands as well such as Seaboard Farms, Swift, and also Hormel. I was curiour what some of you guys preferred and why?

IBP and Seaboard are the two my suppliers carry.
I have had more consistent sizes from Seaboard.

I've had good luck with IBP.

I never buy pumped or "enhanced" or "always moist & tender" ribs.

not intending to plug any one supplier...just curious of personal preferance.
I am going to go check out Hirsch's meat market. I have tried swift but not
the 1855's .It seems to me that swift st.louis cut ribs are a tad on the narrow
side...if my brain is recalling it right. :scratch:

IBP'S have always been my go to rib for comps. I want to do some comparisons

1855's Gary sells me are a nice size and fit well in a comp box.

Wife drug me into Central Market the other day against my will, so I decided to make the best of it. Great beer department, I think. Let's go see the butchers....maybe they are packing those Swifts you speak of....read on.

I take a number and wait in line. About 50 people buying a pound of hamburger and a skinny chicken breast each. Plano must be pseudo vegetarian I'm thinking. So, I spend about 15 minutes wandering around looking for the spares, getting frustrated.

Finally, the butcher kid calls my number and asks me what I need.

"Where are your St. Louis spares, son? All I see are these poorly little baby backs..."

Kid gives me a snooty look. "Sir, those ARE the St Louis spare ribs!"

I snoot him right back, "What, you boys butchering miniature pigs these days? Or maybe they're guinea pigs!". Lady next to me gives me that "stoopid redneck" look. I stare back with the "my wife is skinnier and better looking that you" look.

Kid squeaks out, frustrated: "No sir, I tell you those ARE the spares. How many you want?". Gives me that "KMB" look suburban kids have these days.

"You better give me about 40 since they're the size of Vienna sausages, kid!".

Can't understand why they called Security all the way over to help me out with my bags.

I dont have an HEB close to me... I believe IBP stands for Iowa beef packers.
Formely...owned by tyson foods now! There out of Dakota , Nebraska.
