Looks good enough to inspire me to do one tomorrow. It'll be smaller (2#) but I'm doing some beef ribs to boot (another sneaky Albertson's find 8) ) Haven't decided on sides yet but I think a feta/cucumber salad is in the making.

Dave you are going to love it.
After reading your post on Albertson, I started checking at our local Brookshires. I have been finding some of the same things. Monday they had 100% natural spares sitting right on top. They were nice, not vacum sealed, just ribs. But they were pricey, 12.00-13.00 per rack. Decided to wait. Went back in on wed morning, didn't see them. Bunch of processed stuff showing, started digging. Found them, @ $ 6.00 and change per rack. Loaded up.
Went in this morning just after they opened. Found six or seven pork tenderloins that were priced down from mid $5.00 to mid $2.00 range. They were several days away from the sell by date. Picked up a few and put them in the freezer.
