Thankx Jim, do you mean that fact for a wood burning pit, or as smoke wood in a charcoal fired smoker ?

Either way. :D I would mix it with another wood if using it as splits in a smoker. Chunks used with charcoal, same as pecan or hickory.

First, let me say I smoke on a Traeger Lil Tex smoker grill which is pellet feed as monitored by my digital control thermometer. I have used several types of wood pellets, mesquite, hickory, apple, pecan, to name a few. Of course, we all have our favorite, but after smoking on my grill using several types of wood; I get the best flavor, beef, chicken, and pork with apple. So, with my comments and 5 cents,,, I thought I would throw in my thoughts. :D
I am no competitor, but am pursuing the "WOW that has to be the best BBQ Ribs, Brisket, or Chicken I have tasted" results. And, I love to smoke on my grill, Traegar Lil Tex. http://www.traegergrills.com

I've done a lot of pellet cooking (2,500# pellets). With Traeger I find the best smoke is at the lowest setting (dial is better than the three position switch). What the competition pellet heads are doing is three hours at smoke or 180F before they start their real cooking. Hope that helps.

I´ve the possibility to get a quite huge amount of wildcherry.
Never smoked with wildcherry so far.
Any suggestions ?

Way to go ? Should I take it ?

It's great for chicken. It will turn the skin or exterior color of meat a little darker than other woods.

i usually smoke with oak... my question here is ... is it ok to smoke with oak that was infected with oak wilt.... ???

No it is not ok!!! :shock: the smoke from oak wilt will contaminate metal in your pit, also the smoke that the wood puts off will infect other oak trees as it blows in the wind. Oak wilt affects Post and Red oak mostly, it doesn't seem to affect Live oaks near as bad. :wink:

it does say, "If the wood is sufficiently dried, however, spore mats will not develop." of course one should read the whole article and proceed with caution.
now i would be comfortable in agreeing with red, in that i would not burn infected wood especially where the chance of spreading the infection is high. after all, what good is it to chance ruining future sources of fuel?

Cherry vs. Apple.

I usually cook with cherry wood but my supply has been depleted. However, I have a bunch of Apple wood laying around. So which one is better for pork ribs? I love the aroma and texture that the cherry wood adds...it is simply awesome. But I have never worked with apple. Is the apple just a strong as cherry? FYI, I pretty much have a standard bbq pit..

I can't answer as far as a comparison goes since I've never used cherry, but apple goes fantastic with pork. It's not a particularly strong wood, as it imparts a mild and fruity flavor to the meat. Give it a try and I don't think you'll be disappointed.

I've found a place online,that sells coffee wood chunks & orange wood chunks.What do you guys think about using these?Now I can drink & eat my coffee. :lol:

Bill, I've used orange wood chips but that was a long time ago. The citrus flavor goes well with seafood.
