Hello, I am going to be smoking some baby back ribs this weekend. My smoker will be around 225 to 250. How long do you think it will take. I think I've seen on TV that they say around 4 hours.

When I wrap I add some apple juice and use pecan splits

There are many variations or time methods and I use a similar 2 2 1 method like Davidtex.
I smoke 2 hours...foil 2 hours...throw my sauce on and grill for a few min ( I like a good bark)
...then foil again for an hour.
Juicey and fall off the bone goodness.

Thanks Meat, I didn't even think about putting them in foil but it sounds like a good plan. I'm going to put some sauce on them at the end too.

3-1-1 is pretty popular as well

When you are in the foil you are steaming the ribs and they will tend to get a little mushy

Taking the ribs out of the foil for about an hour will firm them back up a bit - then sauce for about 20 minutes

My personal preference - I don't foil and I don't cook to time

In the smoke for 5-1/2 to 6 hours (no foil)
Look for a nice pull back on the bones
Use the bend test to decide when they are done

Bend test - slide your tongs half way down the ribs and pick them up - will bend to almost 90 degrees when done

Good luck with it

Are they real baby backs (1.5# and down) or loin backs? Loin backs will take a little longer but actually have some meat on them.

^ this is how I do mine. about 3 hours total. right after i set them on and took the pic I adjusted the ribs on the skewers so they didn't touch. cooking them indirectly at about 250 or so with light smoke. I did feel like I needed to rotate them every once in a while because the way my grill is and the way I cook the one was a lot closer to the heat source. I suppose if you have a firebox type you wouldn't need to mess with them.

Thanks everybody for your helpful tips. I was going to do the 2 2 1 but after I got going I realized I didn't have enough foil. So I just smoked them for 5 hours and sprayed with apple juice and put some sauce on the last ten minutes. I did the 90 degree hang to tell when they were done. They came out great. These baby backs were super meaty and along with corn on the cob and potato salad made a great meal. I tried to attach some pics but when I try to add the file it tells me they are too big maximun size is 256KiB
